Favorite Autumn Recipe: Pumpkin Bread

Sarah asked for everyone to share their favorite fall recipes. Here is one of mine:
Favorite Autumn Pumpkin Bread Recipe
Ingredients
1 1/2 cups whole wheat flour
1/2 teaspoon of salt
1 cup natural sugar
1 teaspoon baking soda
1 cup pumpkin purée (fresh or canned is fine)
1/2 cup olive oil (I love olive oil!)
2 eggs, beaten
1/4 cup water
1/2 teaspoon nutmeg
1 teaspoon cinnamon
1/2 teaspoon allspice
Method
1 Preheat oven to 350°F. Mix together the flour, salt, sugar, and baking soda.
2 Mix the pumpkin, oil, eggs, 1/4 cup of water, and spices together, then combine with the dry ingredients.
3 Pour into a prepared 9×5x3 inch loaf pan. Bake 50-60 minutes until you can insert a toothpick and it comes out clean. Take out of the pan and let cool on a rack.
Makes one loaf. Can easily double the recipe.



Thanks for the link to my blog, and for this recipe! The pumpkin bread recipe I used last week calls for a good amount of shortening and I since I don’t love that, it’s nice to see this recipe that’s a bit different. I also like that your recipe calls for whole wheat flour and olive oil — I’ve never used olive oil in baking but I’ll give it a try!
